Our passion for making cold cuts is reflected in our attention to every detail, which is why we don’t use ready-made mixes. Each composition is developed by us, so that each cold cut has its unique taste and character.
“Maturing” is another very crucial stage in our production process, allowing our products to achieve taste and aroma perfection.
During this stage, we give the meat enough time to absorb all the particles of precious spices, herbs, and plants. It is during this time that a harmonious composition of basic flavors and aromas is formed.
It’s important for us that each piece of meat receives enough time to assimilate all the ingredients that will give it a unique character. Thanks to maturing, our cold cuts gain depth of flavor and intensity of aroma, which will be appreciated by the most demanding connoisseurs.
On the right day and at the right time, the smoking process of our products begins, lasting several days. During this process, the cold cuts are repeatedly passed between aromatic smoke and fresh, controlled air. We take care of every detail, carefully controlling the temperature and humidity of the air, allowing the cold cuts to rest and gain strength before the next smoking stage. We strictly adhere to specific cycles, tailored to the type of cold cuts, which gives them a unique aroma.
It is worth noting that we carefully select seasoned, bark-removed noble deciduous trees for the smoking process. After smoking, our products move to a special dry room, where the last, sixth stage begins – drying, which is a kind of rest. It is during this time that they acquire their characteristic color, taste, and aroma, waiting for the moment they will be packaged and delivered to you.
